Today we celebrate Erik's friends retirement (Kenny).
In honor of him, the Naughty Gnome:
Fill glass with ice
1oz your favorite dark rum
Dash of bitters
Top with ginger beer
Enjoy!
To keep our country drink idea going, we chose India. This is Mango Mojito:
Mint Simple syrup:
1c water
1c white sugar
2/3c mint leaves
Mango Mojito:
1c Mango puree
2c white rum
1c lime juice
2c club soda
MINT SIMPLE SYRUP:
- In a small saucepan set over medium-high heat, bring sugar and water to a low boil/simmer.
- Stir until the sugar dissolves and then add in the mint leaves. Simmer 3-4 more minutes, without stirring.
- Pour the simple syrup over a mesh strainer set over a glass jar.
- Allow the simple syrup to cool in the refrigerator for about 30 minutes.
MANGO MOJITOS:
- Once the simple syrup has cooled, pour it into a large pitcher followed by the mango puree, rum and lime juice.
- Stir. When ready to serve, add the club soda and gently stir. Pour into ice-filled glasses and garnish with lime wedges and fresh mint leaves.
